Coeur d’Alene-based Cosmic Cowboy Grill owner Steve Eller says he’s signed a 10-year lease to occupy space on the ground level of River Park Square that once housed the Tortilla Union restaurant.
Describing his restaurant as “fast casual,” Eller says he wants to bring to Spokane a place where a “veggie-loving cosmic” can dine with a “meat-loving cowboy” under the same roof.
Scheduled to open in January, the restaurant serves a variety of dishes featuring burgers, salads, and wraps. Other offerings include chicken, salmon steak, tofu, and veggie plates. It serves to-go orders for family sizes of four, has a children’s menu, and can cater events, the restaurant’s website says.
“This is going to be a great addition to downtown Spokane’s already flourishing lineup of restaurants,” says Kiemle & Hagood representative Richard Fox, who represented Eller. “People are going to be really pleased with the restaurant’s offerings.”
Eller, a three-year resident of Coeur d’Alene who spent the prior 30 years living in Austin, Texas, opened the original Cosmic Cowboy in 2017 at 412 W. Haycraft, in Coeur d’Alene.
