Uno Más Taco Shop has entered a new era, this time in the North Monroe Business District.
Under a slightly altered name, Uno Más Tacos & Tequila opened in the North Monroe Business District earlier this month, at 2020 N. Monroe.
Uno Más originally opened in 2022, with locations in Spokane Valley and the Wonder Building, in Spokane’s North Bank neighborhood. The Valley restaurant has since closed, and the Wonder Building location is open on a limited basis, primarily when large events are happening in the area.
At the new flagship location, the name isn’t going to be the only change.
“We’re in the process of expanding everything,” owner Ramsey Pruchnic says. “Expanding the menus, expanding the space, expanding the hours.”
Through the remainder of January, Uno Más will be in its soft-opening phase as work continues on the restaurant’s second floor, and the team dials in the expanded menu.
Uno Más is tucked away in what used to be a mechanic’s garage, behind the Indaba Coffee location that opened last year, and next to the new Millennium Monroe apartments.
“I wanted to be in a neighborhood where I knew the neighborhood could support the concept,” Pruchnic says. “I wanted to be in close proximity to downtown, but I wanted to have a space that had ample parking.”
The restaurant has two floors, both of which will have full bars stocked with a large selection of tequila once the upstairs renovations are finished. There is also a back-patio area that will be open throughout the summer.
“Our goal is that sooner than later, we’re going to have the largest tequila selection in Spokane,” Pruchnic says.
The Monroe Street space has room for more kitchen equipment than the Wonder Building Uno Más location, and that allows for more flexibility with the menu.
“When we exited our Dishman-Mica location when our lease came up, instead of staying in the Valley, we were able to move a lot of that equipment down here,” Pruchnic says. “We already had a team in place. We wanted to do this build out, and so we came back into Spokane.”
Cooking options at the new location include a griddle, fryer, stovetop, and over fire.
“We smoke all of our own meats now, here on location,” Pruchnic says.
Currently, the food menu is the same as the menu for the location in the Wonder Building. Uno Más moved away from the smaller street tacos and now offers a variety of quarter-pound tacos, as well as an assortment of side dishes.
Jesse Orchard, executive chef at Uno Más, is heading up the menu expansion.
“I just say it’s fun food,” Orchard says. “We’re not pretentious at all. We keep a pretty open mind about what we want to do with the food. It’s more Latin and not necessarily Mexican specific.”
Orchard and his kitchen team plan to have both lunch and dinner menus, the latter of which will have full entrees. They also plan to offer more shareables, for example they plan soon to roll out a queso fundido dish, which typically consists of melted cheese and pork sausage.
Orchard says other dishes are being considered, like big quesadillas, some Tex-Mex dishes, and some seafood options.
“We’ll do more things with fish, probably ceviche,” Orchard says.
Orchard says they'll also do more with vegetables, and are working on adding a mushroom taco.
Uno Más also has expanded its sauce and salsa options.
“We’ve got an extra hot, like really, really spicy salsa for those enthusiasts,” Orchard says.
Pruchnic still is working out the days and hours for the new location, but he says the goal is to be open daily with some late-night hours.
The new restaurant currently has about 10 employees, but that number will grow as the upstairs space becomes operational and the expanded menu is rolled out.
Several employees from Zona Blanca Ceviche Bar, which closed last year, now work at Uno Más.
Pruchnic originally opened Uno Más with chef and restaurateur Chad White, who owned Zona Blanca, among other restaurants, and Travis Thosath, who owns TT’s Old Iron Brewery. White and Thosath are no longer involved with Uno Más.

*Post Falls-based Konala LLC plans to open its first Spokane location on Jan. 24, the healthy fast-food franchise announced on its website. The new location is at the site of a former Carl’s Jr. restaurant at 6740 N. Division.
*Longtime Spokane restaurant Gordy’s Sichuan Cafe closed earlier this month. Gordy’s was a staple of the South Hill for more than 20 years.
